Mighty Nut Powdered Peanut Butter Recipe and Giveaway

All opinions expressed are my own. I’ve always enjoyed peanut butter, whether it be in peanut butter and jelly sandwiches, cookies, or shakes. I’ve been using it lately in my shakes. Who can resist a peanut butter, banana protein shake? So I was excited to try Go Mighty Powdered Peanut Butter from Peanut Butter & Co.!

There are four flavors: original, chocolate, vanilla, and flax & chia. I tried the chocolate and original flavors and enjoyed them both. I think I prefer the original flavor because it stood out more in my shakes as well as in the cookies I made. There is a subtle chocolate taste in the chocolate flavor which tasted good too. They’re both good and I like the idea of easily adding 5-6 grams of protein to any snack or meal. Also, there’s 85% less fat calories than traditional peanut butter as well as only 1-1.5 g of fat per serving.

It’s been a little while since I baked and I thought it would be the perfect time to use the Mighty Nut Powdered Peanut Butter to bake cookies. I decided to pull out an old chocolate chip cookies recipe I used a lot when I was younger from my home economics class that I tweaked and made into a peanut butter chocolate chips recipe. Instead of shortening I used applesauce. I also reduced the amount of chocolate chips as well as added the peanut butter. Here’s the recipe:

Peanut Butter Chocolate Chip Cookies

  • 3 Tbsp applesauce
  • 1/3 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup Go Mighty Nut Powdered Peanut Butter
  • 1 3/4 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Directions:
1. Preheat oven to 375 degrees
2. Mix thoroughly applesauce, butter, sugars, egg, and vanilla.
3. Stir in remaining ingredients.
4. Drop dough by rounded teaspoonfuls two inches apart onto an ungreased baking sheet.
5. Bake 8 to 11 minutes.
